Abstract
ABSTRAK UMKM di Indonesia mengalami pertumbuhan signifikan, termasuk di sektor makanan. Pabrik Roti Bakar Azhari di Yogyakarta menghadapi masalah waste dalam proses produksinya. Penelitian ini menggunakan Lean Manufacturing dengan tools Value Stream Mapping (VSM) dan Process Activity Mapping (PAM) untuk mengidentifikasi dan mengeliminasi pemborosan. Hasil penelitian menunjukkan bahwa waktu proses produksi roti tawar sebesar 7819,6006 detik atau 2,172 jam dengan pemborosan terbesar pada transportasi sebesar 309,823 detik. Setelah perbaikan, total waktu produksi berkurang menjadi 7511,121 detik atau 2,09 jam. Implementasi strategi Lean Manufacturing berhasil mengurangi waste dan meningkatkan efisiensi proses produksi di UMKM Roti Bakar Azhari. Temuan ini menunjukkan bahwa pendekatan Lean dapat diterapkan secara efektif pada UMKM untuk meningkatkan efisiensi dan produktivitas. Kata Kunci : Lean Manufacturing, Value Stream Mapping, Process Activity Mapping, Pemborosan ABSTRACT Small and Medium Enterprises (MSMEs) in Indonesia have been experiencing notable growth, particularly in the food sector. The Azhari Bakar Roti Factory in Yogyakarta is encountering waste issues during production. This study utilizes Lean Manufacturing, Value Stream Mapping (VSM), and Process Activity Mapping (PAM) tools to pinpoint and remove waste. According to the research findings, the production process time for white bread is 7819.6006 seconds, equivalent to 2.172 hours, with the most significant waste occurring during transportation, totalling 309.823 seconds. After improvements, the production time was shortened to 7511.121 seconds, equivalent to 2.09 hours. The Lean Manufacturing strategy has successfully reduced waste and improved the efficiency of the production process at Roti Bakar Azhari MSMEs. The results demonstrate that the Lean approach can effectively be implemented in MSMEs to enhance efficiency and productivity.
