Abstract
Classification of beef quality in conventional ways such as observing meat color, fat color, intensity marbling and texture with human senses, this way still lacks accuracy in determining the quality of beef, this is due to the lack of public knowledge in choosing the quality of beef in accordance with the Indonesian National Standard. Researchers will build a system for classification of beef quality using themethod K-Nearest Neighbor by analyzing texture and color. This study contains data on 85 images of beef with 75 images obtained from shutterstock used as training data as many as 60 images and test data as many as 15 images, while 10 images were obtained from the results of taking images of beef in RPH H. Safari which were used as training data. The results of this system are the quality of beef quality I, quality II and quality III. The greatest accuracy value obtained is 100% while the smallest accuracy value is 60%. Keywords: Beef, K-nearest neighbor, Texture and color analysis.
